Everyone has a go-to dish, and mine is the Spanish omelette, a simple yet delicious concoction of three ingredients: eggs, potatoes, and oil.
Here in the Basque Country, we love having it for breakfast: Coffee, a slice of Spanish omelette, and a piece of bread. And when you visit bars, you'll find them in all sorts of variations: with crab sticks and mayonnaise, ham and cheese, onion… even cod!
Just like pasta, the secret lies in the personal touch each one adds. So, finally, I'm sharing my potato omelette recipe:
INGREDIENTS (for 4 people, except in my house that lasts for 2) 😂
- 4 large potatoes
- 6 eggs
- Extra virgin olive oil
- Salt
- Green bell pepper
- Red bell pepper
PREPARATION
- Wash and dry the potatoes
- Peel the potatoes into slices using a potato peeler (you can also cut them into cubes or slices, but this is one of my little tricks)
- Place the potato slices in a bowl, add salt to taste, and mix well
- In another bowl, crack and beat 6 eggs (don't overbeat them, this will make the omelette creamier)
- Cut the green and red bell peppers into chunks (size to your liking)
- Heat a large frying pan with extra virgin olive oil (I usually add a good amount of oil)
- When the oil is hot, reduce the heat to medium and fry the green and red peppers to infuse flavor into the oil
- Once they start to turn golden, don't remove them yet, add the potato slices to the skillet and let them fry together until the potatoes are golden brown on both sides (You'll probably have to fry the potatoes in 2-3 batches, depending on the size of your frying pan)
- Once done, remove the peppers to a plate and add the potatoes to the bowl with the beaten eggs, and mix
- After you've fried all the potatoes and mixed them with the eggs in the bowl, heat a slightly smaller frying pan with a drop of oil over high heat (non-stick frying pan)
- Pour the potato and egg mixture into the frying pan
- Let it sit for a few seconds (less than a minute depending on your heat) and when you think the base is cooked, using a lid or a large flat plate, flip the omelette
- Put the omelette back in the frying pan to cook the other side and let it cook for a few more seconds until golden brown on both sides
- Take it out again with the help of a flat plate and serve the omelet on a plate and place the green and red bell pepper in the center of the omelet.
- Et… voilà!
